Sundays are for baking: triple chocolate cupcake

Happy Sunday friends!

It’s raining outside and that always makes me want to bake like crazy. Today I decided to give the famous cupcakes a try. I have to admit I never made „real“ cupcakes. You know, the one including topping. Why? Well, because I am not into buttercream. Never was. But I love cream cheese so I made a chocolate cupcake with chocolate cream cheese froszting. Hooray! 🙂

First, let’s bake the cupcakes!

For 16 cupcakes, you will need:

  • 115 g butter, room temperature
  • 200 g sugar
  • 2 large eggs, room temperature
  • 85 g flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 60 g unsweetened cocoa powder
  • 120 ml milk
  • 1 teaspoons vanilla
  • mini semi-sweet chocolate chips (a handful)

As a first step, beat the butter until softened. And then add sugar and keep beating until light and fluffy. Keep beating and add the eggs until everything is well combined.

In a seperate bowl, mix flour, baking soda, baking powder, salt and cocoa powder. In another bowl, mix the milk and vanilla. Add the „dry“ ingredients to the butter-sugar-egg-mix and then add the vanilla milk. Stir in chocolate chips.

Scoop the batter into baking cups 1/2 full. Bake at 175 °C – about 15 – 20 minutes and use a toothpick to try if already finished.

The frosting:

  • 200 g cream cheese, room temperature
  • 100 g unsalted butter, room temperature
  • 300 g powdered sugar
  • 30 g cocoa powder

First, mix the cream cheese and butter until smooth and creamy. Then, slowly mix in the powdered sugar. And as a last step, mix in the cocoa powder. Add it to the top of your cakies and… well, you’re done! You also might want to add some nuts like I did.

Oh! And one last advice… Please hide the cupcakes. Because if you don’t…
