Recipe: Carrot soup.

Since I realized that baking makes me happy but all the sugar makes all my workout at the gym worthless. So I decided to cook and bake healthy stuff. Or at least no cookies 🙂

 

I love cooking soups. And carrot soup is one of my favorite. For a (huge) 2 person soup you’ll need:

400 g carrots (peeled and cut into slices)
3 – 4 potatoes (diced)
1 onion (diced)
1 l vegetable stock
juice of 2 oranges
100 ml soy cream (or regular cream)
salt and pepper
a tablespoon of olive oil for roasting

First, roast the onion and after a short while, add the carrots and potatoes.
Now, add the vegetable stock. Cook for about 10 minutes. Add the cream and cook for 20 minutes on back burner.

Before the soup is done, add the juice of two oranges as well as some salt and pepper. And now… with a hand blender, blend the soup until it’s all soft and creamy.

Serve with a cream topping and enjoy! ❤
