Last Sunday I made a delicious homemade dinner and since the whole family loved it – I wanted to share the delicious recipes! 🙂
So what did I serve? There was Focaccia and Antipasti (and leftover herb butter) – and all that has been made by me.
Let’s start with the Focaccia. Do you know it is some kind of italian Pizza? It is and we looooove it! Focaccia can be served plain or with delicious vegetables like tomatoes. After making the Antipasti I didn’t have any tomatoes left so I chose to work with Zuccini and Onion! Turned out pretty delicious.
For the Focaccia:
500 g flour (I used 2/3 wheat flour and 1/3 rye)
400 ml lukewarm water
3 tablespoons olive oil
1 package dry yeast
1 1/2 tablespoons salt
You will also need:
Zuccini (like, half a Zucchini)
First, mix the flour, yeast and salt in a bowl, add oliveoil and water and knead the dough for about 10 minutes until it is soft and elastic. Now put it in a bowl and cover with a towel for 1 – 1.5 hours until its volume has doubled.
After that time, knead again and let rest for another 10 minutes.
Now shape the Focaccias (I made three big ones) and put them on a baking sheet. Cover again with a towel and let rest for 30 minutes again. It will have doubled its volume again.
And now you use your fingertips to form little dents on the top of the Focaccia. After that, use a brush or a spoon to spread some oliveoil on the dough. Now spread as much rosemary as you want. Cut thin slices from the Zucchini and Onion and spread on the Focaccia too. Then add some salt and pepper. If you want to, sprinkle some of the rosemary on the Focaccia. And some oil. Will taste even better!
Bake at 200 °C for 30 minutes and ENJOY! ❤ You will love the delicious smell and taste of the Focaccia. I promise!
