The other day I craved chocolate. And I wanted to bake. Then I realized I had no eggs at home. So I found a recipe for vegan brownies here.
Those brownies are DELICIOUS. I swear, they are soooooooo good. You should try making them, – the best part about the recipe: it is very easy.
For the brownies:
2 cups flour
2 teaspoons baking powder
1 cup chopped nuts (walnuts)
0.5 cups cocoa powder (I used a bit more… I like my brownies very chocolate-y)
1 teaspoon salt
1 teaspoon vanilla
3 tablespoons agave syrup (that’s a change from the original recipe – they used maple syrup AND I reduced the sugar because I am trying to cut back on sugar,… you know: because sugar is bad)
0.5 cups oil (I used Canola oil – and because I like the brownies more soft I used a bit more!)
1 cup water or soy milk (I used a cup almond milk)
I also added a few chocolate chips. Just for the fun.
For the ganache I used:
200 g vegan dark chocolate (I used non-vegan semisweet but next time I will definitely use dark chocolate because then it won’t be that sweet!)
100 ml (soy) cream
30 g butter (I used soy margarine, worked well too!)
1 tablespoon powdered sugar
And now on to the baking:
First combine the dry ingredients and then stir in the fluid ones. Fill the dough in a parchment paper lined baking pan (appr. 30 cm x 20 cm wide) and bake at 190 ° C for 25 minutes.
While your brownies are baking, prepare the ganache. Ganache is a soft chocolate-y cover for your brownies. It makes them even more delicious!
In a small heating pan, melt all the ingredients. Don’t forget to stir!
Once the brownies are ready baked, cover them with the ganache. Let cool until the ganache is sticky. It won’t dry completely but that’s exactly what you want. 🙂
